La Pomme de Pin is a catering business located in Barrington, IL, featuring only natural and organic foods. We support local, sustainable agriculture wherever possible, with all products hand selected by chef/owner, Erin Bailey. A central philosophy of La Pomme de Pin is to provide natural foods from responsible suppliers because it's healthier for us, better for animals and kinder to the environment.
Erin's cuisine reflects the classic French method that she learned while studying cuisine and pastry at the renowned Le Cordon Bleu, Paris, where she completed Le Grand Diplôme with honors. She continued her education through several apprenticeships in some of the most acclaimed kitchens in the world. Her experiences include working with Alice Waters' team at Chez Panisse, in Berkeley, CA, with Daniel Boulud at Daniel in New York City and with Neil Perry at Rockpool in Sydney, Australia. From there she continued her training in Thailand, at the Thai Cooking School in the Oriental Hotel, Bangkok. Her entrepreneurial spirit led her to Cornell where she completed her Masters in Hospitality Management from the Hotel School, gaining the knowledge necessary to create La Pomme de Pin.
Erin's preparation is pure, with respect for ingredients. Inspired by her worldly experiences, her food is ethnically diverse, responsibly sourced and simply crafted to highlight the quality components to which she is committed.
